When you bake for a playgroup, you have to take into consideration the allergies or other dietary restrictions of all the kids, which often leaves you eating plain rice cakes. Here's a better option that's egg-free, dairy-free, and can be modified to be gluten and peanut free too! Notice the only sugar is what naturally occurs in the bananas.
1 c. quick oats
1/2 c. flour
1/2 c. baby cereal (such as rice cereal, oatmeal cereal, etc.)
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. baking powder
1 c. mashed ripe banana (about 2 bananas)
1 tsp. vanilla
3 Tbsp oil (canola, vegetable, whatever)
1/3 c. peanut butter (optional)
Mix dry ingredients in a large bowl.
Mix wet ingredients in a small bowl.
Add the wet ingredients to the dry and stir to mix.
Roll into balls a little smaller than a golf ball. Flatten slightly on greased pan, or use parchment paper.
Bake at 350 degrees for 12-15 minutes. Makes about 15 cookies.
